During one of her visits out to Barbados representing the Chambers British Agri-Food Consortium, Pauline Wade was asked by one of Barbados'meat processing companies whether she could help them find a British butcher who could show their staff how to make traditional British sausages. The company were already producing sausages but the expatriate community out in Barbados were telling them that the sausages made in Barbados did not taste like the traditional British banger. Pauline immediately thought of Martin Smith, Master Butcher from Bridlington. For many years now Pauline has been buying sausages from Martin and did not hesitate in recommending Martin to the Barbadians. Fortunately, for Pauline Martin accepted the challenge and he and his wife Ann, flew out to Barbados at the end of August.
Since the visit Martin has become something of a celebrity in the region appearing on television and featuring in several newspapers. To commemorate his visit he has produced a "Caribbean Sausage" which is on sale at his Bridlington shop. Pauline said, "I am delighted that the Chamber was able to help the Barbadians and even more pleased that Martin who has been a Chamber member of many years accepted the challenge." "I even received an e-mail from the British High Commissioner in Barbados wanting to know where he could buy the sausages" said Pauline. The Hull & Humber Chamber and its sister Chamber the British Caribbean Chamber is very active pan Caribbean and last year ACMC Beeford, one of the UK's leading pig genetics companies assisted by the Chamber engaged with the pig producers of Barbados to develop the industry on the Island. The Chamber will lead a food and drink focused trade mission to the Caribbean end of January 2005 and already regional food companies are asking for details. A British week promoting traditional food and drink products will be held out in the market. The mission will visit Barbados, St. Lucia, Antigua and Belize.
